Rub the mussels well and rinse them with water very well. Place them in a saucepan with an average quantity of water, cover and let them steam for a few minutes to open. Drain and keep their juice. Cut the onions into thin slices and sauté them with the oil until wilted. Add the mussels, turn them off with the wine and add the juice.
