Pork Sauté with Aromatic Dry White Wine Ambelikos

Ingredients (Serves 4):
- 600g pork neck or pork belly, cut into bite-sized pieces
- 3 tbsp olive oil
- 1 small onion, finely chopped
- 1 garlic clove, minced
- ½ cup Dry White Wine Ambelikos
- Juice of 1 lemon
- 1 tsp oregano
- ½ tsp thyme
- ½ tsp sweet paprika
- Salt & freshly ground black pepper
- ½ tsp mustard (optional)
- ½ cup meat broth or water (if needed)
Instructions:
- Heat the olive oil in a large pan over medium-high heat.
- Add the pork and sauté until golden brown on all sides.
- Stir in the onion and garlic, cooking for 1-2 minutes until softened.
- Deglaze with Dry White Wine Ambelikos and let the alcohol evaporate, bringing out the wine’s aromas.
- Add the spices (oregano, thyme, paprika), salt, and pepper and mix well.
- Pour in the lemon juice and add the mustard (if using).
- If needed, add a bit of broth or water and simmer for 10-15 minutes until the pork is tender and the sauce thickens.
- Serve warm, accompanied by fresh bread, crispy fries, or a light salad.
