Pork Sauté with Aromatic Dry White Wine Ambelikos

Ingredients (Serves 4):

  • 600g pork neck or pork belly, cut into bite-sized pieces
  • 3 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • ½ cup Dry White Wine Ambelikos
  • Juice of 1 lemon
  • 1 tsp oregano
  • ½ tsp thyme
  • ½ tsp sweet paprika
  • Salt & freshly ground black pepper
  • ½ tsp mustard (optional)
  • ½ cup meat broth or water (if needed)

Instructions:

  1. Heat the olive oil in a large pan over medium-high heat.
  2. Add the pork and sauté until golden brown on all sides.
  3. Stir in the onion and garlic, cooking for 1-2 minutes until softened.
  4. Deglaze with Dry White Wine Ambelikos and let the alcohol evaporate, bringing out the wine’s aromas.
  5. Add the spices (oregano, thyme, paprika), salt, and pepper and mix well.
  6. Pour in the lemon juice and add the mustard (if using).
  7. If needed, add a bit of broth or water and simmer for 10-15 minutes until the pork is tender and the sauce thickens.
  8. Serve warm, accompanied by fresh bread, crispy fries, or a light salad.
